Spring Pea Soup

Ingredients:

  • 2 cups cubed peeled potatoes
  • 2 tbsp butter
  • 6 cups chicken broth
  • 2 cups frozen green peas
  • 2 tbsp minced chives

Instructions:

  • Saute potatoes in butter until browned.
  • Stir in broth.
  • Bring to boil.
  • Reduce heat.
  • Cover and simmer, until potatoes are tender (10-15 min)
  • Add peas.
  • Coock 5-8 minutes.
  • Cool a bit.
  • Puree.
  • Sprinkle chiives when serving.
