Ingredients:
- 4 large red peppers
- 2 tbsp butter
- 1 large red onion
- 2 tsp of garlic powder
- 4 cups broth
- 1 tbsp lemon juice
- 1 can of tomatoes (pureed)
- basil
- salt&pepper
Instructions:
- Roast peppers, remove skins
- melt butter
- add chopped roasted peppers, garlic and onions
- cook 3-4 minutes
- add broth and 1 can pureed tomatoes
- add lemon juice and basil
- blend with baby blender
