Roasted Red Pepper Tomato Soup

Ingredients:

  • 4 large red peppers
  • 2 tbsp butter
  • 1 large red onion
  • 2 tsp of garlic powder 
  • 4 cups broth
  • 1 tbsp lemon juice
  • 1 can of tomatoes (pureed)
  • basil
  • salt&pepper

Instructions:

  • Roast peppers, remove skins
  • melt butter
  • add chopped roasted peppers, garlic and onions
  • cook 3-4 minutes
  • add broth and 1 can pureed tomatoes
  • add lemon juice and basil
  • blend with baby blender
