Lentil Soup

 

Ingredients:

  • 3 things of bacon, diced
  • 1 onion, diced
  • 2 celery, diced
  • 2 carrots, diced
  • 2 cloves of garlic, minced
  • 1 bay leaf
  • 1 tsp of thyme
  • 1 stock cube
  • 1 tomato
  • potato diced
  • 1/4 cup of balsamic vinegar

Instructions:

  • cook bacon until almost crisp
  • add onion, celery, carrots, garlic, bay leaf, thyme.
  • Cook 5 minutes.
  • Add 5 cups of water and add stock cube.
  • Add 1 tomato and potato diced.
  • Bring to a boil
  • Add 1 cup of  green lentils
  • Add 1/2 cup of red lentils (dried lentils)
  • Bring down to simmer
  • Partially cover. Cook on low for 45 minutes or until lentils are tender.
  • Add 1/4 cup of balsamic vinegar
