Ingredients:
- 3 things of bacon, diced
- 1 onion, diced
- 2 celery, diced
- 2 carrots, diced
- 2 cloves of garlic, minced
- 1 bay leaf
- 1 tsp of thyme
- 1 stock cube
- 1 tomato
- potato diced
- 1/4 cup of balsamic vinegar
Instructions:
- cook bacon until almost crisp
- add onion, celery, carrots, garlic, bay leaf, thyme.
- Cook 5 minutes.
- Add 5 cups of water and add stock cube.
- Add 1 tomato and potato diced.
- Bring to a boil
- Add 1 cup of green lentils
- Add 1/2 cup of red lentils (dried lentils)
- Bring down to simmer
- Partially cover. Cook on low for 45 minutes or until lentils are tender.
- Add 1/4 cup of balsamic vinegar
