French Onion Soup

Ingredients:

  • 2 tbsp butter
  • 4 yellow onions, shredded thin
  • salt and pepper
  • 1 tsp flour
  • 1/2 dry red wine
  • 1 tbsp choped fresh thyme
  • 1 bay leaf
  • 1 tsp lemon juice
  • 2 cups beef stock
  • 2 cups chicken broth
  • 1/2 cup grated gruyere / cheddar
  • 4 slices of bread (1 inch thick).

Instructions:

  • Melt butter over medium low.
  • Add onions, salt & pepper.
  • Cook until caramelized (1hs).
  • Turn heat up to medium and sprinkle flour.
  • Cook 1-2 minutes.
  • Deglaze with red wine.
  • Add thyme, bay leaf, lemon and stocks.
  • Simmer 10 minutes.
  • Ladle into oven proof pots.
  • Cover with toasted bread and cheese.
  • Broil until bubbly and melted.
