Broccoli Soup

 

Ingredients:

  • 1 brocoli
  • 1 large onion
  • 1 potato
  • 2 tbsp butter
  • 4 cups chicken stock
  • 1/4 cup cream (optional)
  • 1 cup of frozen peas (optional)


 

Ingredients:

  • Behead the broccoli.
  • Peel the skinn off the stem.
  • Dice stem, onions, potato.
  • Saute diced vegetables in butter.
  • Add salt & pepper.
  • Add stock (2 inches above the veggies)
  • Cok until stems and potato are soft.
  • Puree potato and broccoli stem.
  • Add the rest of the diced broccoli head.
  • Cook 5 minutes.
  • Add cream.
  • Heat on low.
